How can I get my kids to eat more vegetables? I get that question a lot from parents. But, it’s not just kids that are failing to eat their veggies; it’s adults too. In fact, according to the Center for Disease Control, only 9% of adults eat the recommended two to three cups of vegetables recommended in a day.
If you didn’t grow up eating vegetables, or if the chef in your house wasn’t exactly a chef, you might be an adult that doesn’t eat them either. It’s time for change.
It might not be that you dislike the veggie; it might be the way that it was prepared. Rather than giving up altogether, try a different way to prepare them. Roasting takes longer than opening a can, or heating in the microwave, but when it comes to taste, it’s a winner, especially for vegetables. Serve these roasted carrots as the side dish for your next meal and watch them disappear!

- 6 Medium Carrots
- 1 TBSP. Olive oil
- Preheat oven to 425 degrees. Line a sheet pan with aluminum foil and spray with cooking spray.
- Clean, Peel and slice carrots into French fry shapes (~1/2” X ½” X 3”) and place in a bowl. Drizzle with 1 Tbsp. of olive oil. Toss well to coat the carrots with oil.
- Transfer to the sheet pan, forming a single layer. Bake ~20 minutes. Check carrots. Continue baking until they are fully cooked and slightly crispy.
*Optional: Salt and pepper to taste (nutrition facts do not include salt or pepper.)
*Optional: For added flavor: remove carrots from oven after ~15 minutes and sprinkle with Rosemary or Thyme. Return to oven for the additional 5 minutes.
